Chicken thighs (boneless, with or without skin – skinless chicken thighs are more healthy).

Though the chicken marination process is almost the same for you cook the balsamic chicken and veggies; whether it is for dinner or lunches. But, the vegetables will be different. That’s why, we will cook the recipe in two way preparation; 1st one will be for lunches & the second one will be for dinner. We will use seven fifty (750g) gram or 1.65lb boneless skinless chicken thighs.

Prepare the balsamic marination – take a bowl add balsamic vinegar, coriander powder, ginger and garlic pest one teaspoon each; onion pest one teaspoon, black pepper powder, kosher salt half (1/2) teaspoon & shake it very well. Lastly, if like to add honey or brown sugar then you can add too (one tablespoon honey or two teaspoons brown-sugar).

But I don’t like sugar content very much in recipe, its burn the chicken & other recipe ingredients especially in skillet; that’s why I will not make the honey balsamic chicken legs skillet recipe.  

Step Two:

pour the mixture in to a Ziploc bag, & add the chicken thighs, make sure remove all the air from the bag & closed the zip. Keep the chicken for at least 30 to 45 minutes for marination.

Baked Balsamic Chicken Thighs With Veggies Recipe For Lunches:

The vegetables we will use here potatoes (one big size- 150 to 200 gram); cauliflower(350 grams or 10 to 12 oz); green bell pepper (one big size or two medium small) & asparagus (10 to 12 pieces), one medium tomatoes.  

Step Three:

Chopped the veggies in medium size; if you like make balsamic chicken skillet (one pan) with veggies all together with in 25 minutes; then you need to avoid the gas oven for cooking. Instead of, use micro-oven or any baking oven for cooking. But, here we will use gas oven for cooking.

1st we will add olive oil to pan golden the onion & store it separately; the baked the chicken on medium flame for 15 minutes & make the flame very low. Add the veggies, fried onion & marination mixture salt & closed the pot for 10 minutes the toss all the veggies. It’s a time to add tomato chili sauces (alternative one fine chopped tomatoes & three green chilies); chicken & cook it for another 5 to 10 minutes add fresh coriander leaf. The recipe is ready for plate.

If you like to make one pan balsamic chicken, sheet pan veggies on baking oven; then add placed the chicken & veggies on baking skillet & add the marination mixture & put the skillet under oven of 25 to 30 minutes at 400 degrees. the baked chicken thighs with veggies are ready to eat.

The vegetable we will cook for the dinner tomatoes (two 3 inch diameter or cherry tomatoes), carrot 12 oz, potato 8 oz (nearly 200 gram), two medium size red bell pepper. two to three medium size red onions ( 2 inches diameter or 150 gram).

Yes, you can use it. chicken breast are more healthy compare to the chicken thighs, because chicken thighs are contains lots of fats. But thighs are more testy compare to the chicken breasts & chicken legs are also inexpensive.

Should I use the skin less or with skin chicken thighs or breast for this recipe?

Well, I like to cook the boneless skin less chicken for this Italian chicken recipe with veggies, There reason for that – firstly I’m not making honey balsamic chicken and veggies recipe, sugar content burn the chicken especially if you are using skillet (frying pan) to grilled the chicken on gas or induction oven.

If you are making skillet honey balsamic chicken legs or breast with vegetables (on a induction oven), then you can use with skin chicken for this recipe. But, give a cut to the chicken it helps the chicken for better marination & it will be much more delicious.
